A complex and mature nose of pear, citrus, mirabelle plum, nectarine: after 15 years of maturation, the initial fruitiness persists, even more candied. Mature, dark and toasty, with warm notes of rusk and mocha, nougatine and speculoos, roasted chestnut and cigar. Some hints of garrigue and honey add to the complexity. The attack is solid, voluntary, dense but without heaviness. The texture is thick, both sticky and crunchy, like crystallised fruit, nougatine or candy apple. The finish with liquorice and pepper notes is salivating and suave.
