Nose of wild strawberry, cherry and redcurrant. It is very vinous (typical of Les Riceys) then the fruit seems to evolve on the tertiary side with notes of faded rose, peony and a little toasted bread/gunflint. A beautiful volume in the mouth. The bubbles are fine and light. We find these same fruits with a slight acidity like cranberry. The fruit is present, with subtle, refined aromas, marked by a certain evolution. The whole remains in a dry, vinous register. Nice length and light bitterness on the finish with a hint of cherry pit. A fine gastronomic champagne that will perfectly accompany a dish from its region; a pan-fried andouillette accompanied by caramelised apples.
