From a small plot in Avize, “La Fosse à Bull”, a combination of all the historic grape varieties of the Champagne region, the grapes are harvested, pressed and vinified in barrels all together. Aged on lees for a minimum of 2 years, the aim of this cuvée is to have a real complexity of aromas and texture but above all to affirm in the glass the pre-eminence of the terroir over the varietal characteristics of each grape variety. Therefore, the percentage of each grape variety is an unknown!

Tasting | The aromatic palette is extraordinarily rich thanks to the diversity of the grape varieties, between almond, date, verbena, lime, pine resin, pear, white peach, melon and an exotic touch evoking pomelo, guava and bergamot. But the soil also expresses itself with intensity in a rather smoky register reminiscent of flint. This expression is confirmed on the palate with a mineral, saline and very aromatic texture on floral and fruity flavours. As broad as it is long, this Champagne is very expressive, combining an ample and soft start with a tonic finish, full of freshness and spicy minerality. A Champagne to be drunk as an aperitif to make the most of its assets, but which will also go well with grilled prawns or a blanquette of veal. |
