Description
From a small plot of 60 ares in Avize “Fosse aux pourceaux” on which no heavy mechanical equipment is used to maintain the vines. Planted in 1959, this parcel is worked only by man and horse, vinified only in barrels, aged for a minimum of 6 years on lees and bottled under a cork stopper with a staple, this cuvée reveals another aspect of the Avize terroir.

Tasting | The first nose is an explosion of aromas: almond powder, brioche, Bourbon vanilla cream, lemon, blood orange, pear, white peach, a smoky dimension evoking flint and a delicate touch of fresh mushroom. The whole is greedy in an olfactory landscape that is both complex and refined. The palate is not to be outdone with its always fine and light bubbles, the wine is delicate, silky to the touch but very structured, energetic, marvellously blending the fruit and the soil whose spicy expression unfolds slowly but surely. The finish impresses by its straightforwardness, its freshness and above all its phenomenal persistence, in a resolutely saline register. This is clearly a great wine, elegant, vertical and deep. It will accompany you in intimate moments as an aperitif but it will also be at ease with scallops, lobster ravioli or veal sweetbreads |
