Description
From a single grape variety and a single year, this 100% Chardonnay is matured and vinified in 205-liter Champagne oak barrels in the purest Champagne tradition. The exercise requires a high quality of work and grapes. It offers the discovery of Chardonnay aromas specific to the terroir of the Montagne de Reims: this white grape variety, rare in Ambonnay, is said to “pinote”! This cuvée is produced unfiltered, with natural chilling and malolactic fermentation.

Tasting | The first nose evokes a delicate blend of toasted-woody notes with hints of lemon, toasted hazelnut, intense chalk with nuances of licorice, rose, pistachio and peanut. Champagne aeration adds notes of marzipan, panettone, candied pear, raspberry, coconut milk and vine peach. The first contact on the palate is soft and fresh, with a creamy effervescence. It develops a luscious, crunchy, coated, fruity body, underlined by a lemony acidity that is just taut and radiant. The mid-palate is orchestrated by a very pure chalky minerality that confers frankness, iodine salinity and length on the palate with chalky resonance. The work in the undergrowth adds concentration to the whole, without offending the mineral chord carried by an intrinsic lemony freshness. Enjoy as an aperitif, of course, but also with golden scallops, back of cod, fillet of sea bass a la plancha, or a fine 24-month-aged Comté cheese. |
