The first impression on the palate is soft and fresh, with a creamy effervescence. It develops a luscious, juicy, fruity texture, supported by just the right amount of pink grapefruit acidity. The mid-palate is marked by a chalky influence that lends openness, salinity and resonance to the aftertaste. The work done in the undergrowth is integrated into this chiselled structure. The whole, harmonious and delicately coated, gains a slender and vibrant finish, where the aromatic return combines with the saline and umami sapidity to make the moment eminently gastronomic. Ideal with pigeon, duck breast or prime rib.
