Description
This cuvée 11,12,13… is a blend of all the parcels from the estate, located in the Essoyes commune, a Côte des Bar terroir essentially made up of clay, which produces grapes with great aromatic intensity, while retaining a beautiful freshness. The wines are vinified using the solera method, preserved in foudres, from the estate’s first harvests in 2011 and from every year until 2020. The wines are aged in barrels and demi-muids for 9 months, with as little intervention as possible. Vinification is carried out with indigenous yeasts from the estate’s own grapes, without fining, filtration, added sulfites or expedition liqueur. The transition to cold occurs naturally, taking advantage of winter frosts. This cuvée has the energy and tension that characterize the estate’s other cuvées, with citrus fruits, spices and mineral notes on the beautiful finish.

Tasting | The first nose is perceived as tense and very fresh. This is followed by notes of citrus, grapefruit and sweet spices such as cinnamon and nutmeg. On the palate, the tension is brilliantly fresh. Grapefruit notes battle on the palate with persistent hints of spice. An admirable and beautiful mastery of acidity that leaves the mouth clean and a desire to return to the glass. This wine offers excellent substance and a long, mineral finish. As well as an aperitif, it's a wonderful accompaniment to oysters or sushi. |
