Description
In search of the maximum expression of terroirs, each year we elaborate our cuvées by separating each parcel, whose different soils give their names to the cuvées. This 100% pinot noir from the La Fosse parcel, on clay-limestone soil with a majority of red clay, is vinified and aged on lees in barrels and demi-muids for 9 months, and aged in bottles on laths for 18 to 20 months. The wine is made with as little intervention as possible; no sulfites are added and malolactic fermentation is natural. A powerful, gourmand blanc de noirs champagne.

Tasting | The rosé hue heralds a fine tasting experience. The nose opens with white fruit (cooked apple) and notes of nectarine, nectarine, ripe blood orange. Then, with aeration, more mature aromas of Hamburg muscats are added, along with spicy and above all floral notes. The palate is delicious, with greedy notes of ripe blood orange, baked apple, peach and red fruit. The wine's texture is creamy and delicate, very expressive, long and mineral, retaining a kind of evanescence and lightness. Long, persistent finish with a fine minerality. A great champagne. This cuvée is perfect as an aperitif or with Breton lobster or white meat. |
