Description
In search of the maximum expression of terroirs, each year we elaborate our cuvées by separating each parcel, whose different soils give their names to the cuvées. This pinot noir/chardonnay blend from the La Fosse parcel, on clay-limestone soil with a majority of red clay, is vinified and aged on lees in barrels and demi-muids for 9 months, and aged in bottles on laths for 18 to 20 months. The wine is made with as little intervention as possible; no sulfites are added and malolactic fermentation is natural. This wine is just superbly vinified and balanced, generous and fine at the same time.

Tasting | On the nose, aromas of citrus peel and vine peach combine with herbaceous notes of lime blossom infusion. On the palate, the wine is round, full-bodied and supple, stretching out on beautiful gooseberry-flavored bitters. The absence of dosage reveals fruit of superb precision, with notes of citrus, quetsche, vine peach, fennel, mint and liquorice. The great mineral length makes you want to go to the table with a fillet of cod a la plancha and wild fennel. |
