In 2017, Chardonnays were superb for Timothée, so he decided to vinify them for an “ephemeral” cuvée of great purity. Heraclite Blanc de Blancs is made from 100% Chardonnay from Premier Cru vines, and follows a similar path to the Blanc de Noir: fermentation with indigenous yeasts, aging in old oak and no dosage.
