Timothée knows what he’s doing, but he always relies on his intuition in the cellar and has no intention of making the same wine twice, as is often the case in Champagne. He cherishes the individual character of the grapes and works with as little interference as possible, without any additives except for a very small amount of sulfur if necessary.
