Light and subtle, with mellow tannins, this Coteaux Champenois Vrigny Rouge reveals all the qualities of this Premier Cru terroir. It’s made exclusively from Pinot Noir from a single plot, “Les Champs Chevalier” in Vrigny, a 45-year-old vine from a massal selection. Hand-picking is very rigorous, and only the ripest, healthiest bunches are picked. Semi-carbonic maceration in whole bunches, with punching of the cap, takes place for 12 days. Alcoholic fermentation is carried out spontaneously by yeasts indigenous to the locality, and malolactic fermentation is natural. Aged on lees for 22 months in small oak barrels.
