This Coteaux Champenois is a 100% Pinot Noir parcel from Le Haut des Bermonts in Ambonnay Grand Cru. These are old vines over 70 years old, worked organically with horse-drawn ploughing. The meticulously selected grapes are destemmed and gently macerated with pumping over for around 8 days. The wine is then aged in oak barrels for 12 months. The wines are neither fined nor filtered to preserve all their aromas.
