This Coteaux Champenois is a 100% Chardonnay parcel from “Les Pierres Vaudons”, in Avize Grand Cru. These are old vines over 35 years old, worked organically with horse-drawn ploughing. The wine is vinified with indigenous yeasts in oak barrels for 12 months, with occasional batonnages. The wines are neither fined nor filtered to preserve all their flavors.
