A ratatouille cooked to the highest standards, eggplant caviar, lamb chops sprinkled with herbs, pasta on a tomato reduction, a plate of red mullet with dried tomatoes seasoned with balsamic vinegar, all sublimate this Rouge, unique in Champagne.
