Tasting | Subtle, pure nose, notes of smoky limestone, fresh grape, apple and cherry aromas. Notes of almond, licorice, pink grapefruit, fresh blackcurrant, wild strawberry, with more heady notes of honeysuckle, pepper and sweet spices. Contact on the palate is clean and fresh, with a creamy, mellow effervescence. Fruity, pulpy and crunchy. Frank, chewy and long on the palate. Balanced, concentrated and crystalline. For a sophisticated aperitif, or to accompany warm oysters au gratin with Champagne, a back of cod snacked with chorizo, or a fillet of turbot with crushed celery, or roast rack of lamb with sautéed potatoes and wild mushrooms. |
